This Easy Homemade Chicken Pot Pie is Way Better Than Store Bought!

Chicken pot pie is a comfort food dish that is typically made with leftover chicken. The dish usually has a crust and the filling usually consists of cooked chicken, vegetables, and cream or milk.
The main ingredients are:
-Pie crust
-Butter
-Flour
-Salt
-Milk
-Chopped carrots, celery, onion, peas, and potatoes, frozen works too
-Cooked chicken (leftover or fresh)
-Heavy cream or whole milk

Here is a tried and true recipe that wins with my family hands down.

1 Pound Pre Cooked Chicken
1 Medium Potato Parboiled
1 Stick Butter
1/2 Medium Onion
1/2 Cup all-purpose flour
2 Cups Chicken Broth
1 Cup Whole Milk
1/2 Teaspoon Pepper
1/2 Teaspoon Paprika
1/2 Teaspoon Thyme
1/2 Teaspoon Ground Garlic
1 Teaspoon all-purpose seasoning
1 1/2 Cups Peas and Carrots Mix
1 Egg
1 Teaspoon water (for the egg wash)
Step 1
Parboil potatoes. You need to peel them and cut them down to about 3/4 to 1 inch cubes. Rinse and boil until firm and tender, you want them to stay in one piece when mixing the ingredients. Depending on size and the temperature you boil them at, should take approximately 5 minutes. Once cooked, drain and set aside.

Step 2
Add about half of a medium yellow onion, diced. Sauté the onion to translucent, make sure the butter doesn’t brown. If it does start to, turn the heat down.

Step 3
Add the all-purpose flour, stirring it well and working out all the lumps. This is the beginning of your gravy. Cook for about 30 seconds on medium to medium high heat.

Step 4
Add the broth. Keep stirring.

Step 5
Add the whole milk.

Step 6
While starting to bring to a low boil, add your seasonings.

Step 7
Once it comes to a boil, turn off the heat and add the Chicken, Potatoes, Peas and Carrots mix. Fold together carefully, as you don’t want to mash the potatoes.

Step 8
Fill the Pie shell. You can make your own crust or use a store purchased crust. When sealing the top crust, using the fold over method, you fold the lower shell onto the top shell to limit leaking during baking. Brush with egg wash after sealing and cutting vents for steam.

Bake at 375 °F for 45 to 60 minutes.

Chicken pot pies are a classic comfort food. They are easy to make, economical and delicious. All you need is some leftover chicken, frozen pie crusts and canned soup. The result is a hearty dish that can be enjoyed any time of the day or night.

Some people use the term "chicken pot pie" to refer to any type of pot pie that contains chicken; however, this recipe is specifically for an American-style chicken pot pie with a creamy sauce and biscuit style crust on top.
