InstantPot® carnitas for Taco Tuesday in a Flash even on Friday
Homemade Carnitas made in an InstantPot®
Here it is, after a long day you're tired but you really, really want Carnitas. Well, here is your answer, your InstantPot®. Using the sauté and the pressure-cook functions, makes it a one-pot meal, as well.
Using the Sauté function you can sear the meat, then using the pressure-cooking function in 45 minutes it's cooked. You can then drain it or reduce the liquid right away again using sauté again. When I did it, it took about an hour and 45 minutes, and during the pressure-cooking time, I was free to tend to other things.

Recipe:
3 Lbs of Pork Roast
1 - 2 Tbsp Oil
2 tsp Minced Garlic
1-2 large onion Quartered
1 Large Orange Quartered
1 Lime Quartered
1 Cup Chicken Broth
1/2 tsp Cumin
1/2 tsp Chili Powder
1/2 tsp General Seasoning
1. Cut 3 LBS of pork roast into approximately 3-inch pieces.
2. Set InstantPot to Sauté and add 1 to 2 Tbsp of oil and a little of the garlic. When heated add the pork and season to taste with general-purpose seasoning, Sear all sides of the meat.
3. Once the meat is seared on all sides, add the rest of the minced garlic, onion, Orange, Lime, Cumin, Chili Powder, and Chicken Broth.
4. Set to pressure-cook on High for 45 minutes and close the lid, set the vent to sealing, and let it cook.
5. Once Pressure-cooking is complete, vent or allow it to come down in pressure before removing the lid. Caution it will contain steam hot enough to leave 3rd-degree burns.
6. Safely remove the lid and remove the citrus pieces from the cooker, set the unit back to Sauté on High, and stir constantly breaking the meat apart, this will help reduce the liquid, do not boil it dry, just until moist.
7. Ready to serve.
